Champignons Salad for Champions

Some days (especially in summer๐ŸŒž) I love having a simple and easy light meal. Since I always try not to eat to much meat because of the terrible life some of these animals leaded I often think about alternatives to include protein into my meals.

Ingredients: (for 2 persons)

250 g champignons
2 carrots
2 big (Roma) tomatoes
100 g cottage cheese
Salad of your choice

black pepper, cayenne pepper, chives (parsley,salt)

Optional: pumpkin seeds

Peel of a few stripes of the carrots with a vegetable peeler and cut the rest of the carrots into slices.
Add the carrots into the middle of your pan and add some water.
Now you can clean and quarter the mushrooms. Spread out the cleaned champignons around the carrots. It is important to place the carrots in the middle first because they need more heat to be perfect.๐Ÿ™†๐Ÿผ
Heat these two ingredients up on a medium heat level.

Prepare the plates by putting huge salad leaves on the ground. Dice the tomatoes and place them on one half of the plate. Now you can put the carrot stripes on top of it and add some cottage cheese. If you want you can highlight this with pumkin seeds. Now add as much pepper as required.
Before adding the champignons and the carrots onto the other half of your plate add some cayenne pepper and some black pepper. Optionally you can use salt and chives or parsley.


I love this light dish โค๏ธ and the fact that it it so colourful โค๏ธ๐Ÿ’™๐Ÿ’œ๐Ÿ’›๐Ÿ’šand contains a lot of protein ๐Ÿ’ช๐Ÿปeven when it is without any meat. As I mentioned in another post I am not (!) a vegetarian but I try to eat moderated and balanced thinking of the severe way animals are treated often.๐Ÿฎ๐Ÿท๐Ÿฐ๐Ÿฅ
We can get a lots of minerals and proteins from the amazing plants of Mother Earth!๐ŸŒŽ

Salmon Spinach Quiche


Last month I went to a birthday party which was a “Crime Dinner”. ๐Ÿ˜ต๐Ÿ”ซEveryone who was invited got a script in advance and a character (I was the murderer๐Ÿ˜Ž๐Ÿ™Š). During the dinner with several courses the play developed and in the end everyone has the chance to suspect one.๐Ÿค” One guest suspected me, but the other girls did not find out that I killed the victim.๐Ÿ˜ˆ๐Ÿ˜

Why am I writing about this funny and exciting evening?

Because the main course was a Quiche Lorraine which inspired me to bake a quiche the next weekend too!โ˜บ๏ธ
But I used different ingredients and made it healthier. ๐Ÿ˜‰Honestly this was so good that I ate more than half of it on my own๐Ÿ˜‚๐Ÿ™Š๐Ÿ™ˆ๐Ÿ™†๐Ÿผ.IMG_9104

Ingredients :

For the crust:

175 g wholewheat flour

90 g butter


The filling:
100 g smoked salmon
250 g leaves spinach (fresh or frozen)
150 g cottagecheese
125 g low-fat quark or Greek yoghurt
125ml buttermilk
1 egg
1 egg yolk
Black pepper


Prepare the dough kneading all the ingredients plus 3 spoons of water together. Depending on the flour you have chosen you might need to add some butter.Put it in the freezer for at least 30 Minutes.

During this action you can start to slice the salmon into very tiny pieces and fry them without additional fat in a pan for a very short time (until they change their colour slightly). Mix it together with the cooked or defrosted spinach. Add some nutmeg and pepper to it.
In a seperate can mix together the quark/Greek yoghurt with the buttermilk, the egg and the egg yolk. Again you can add some nutmeg and pepper.IMG_9080

Grease a pie form and press in the dough so that it covers everything. The crust is meant to be thin.
Now you press into the dough with a fork several times, to avoid a dry crust.IMG_9081

Bake your crust for 10 minutes at 390F (200C) degrees.

Put the spinach-salmon mix on top of it and top this with cottagecheese.

Pour the milk-quark-mix over it and bake it at 390F (200C) degrees for about 30 minutes this time.

Fluffy Protein Pancakes

Is there anything better than sleeping as long as you want, waking up and having pancakes for breakfast?๐Ÿ˜๐Ÿ˜๐Ÿ˜
Yeah, maybe there is, but it is not much.๐Ÿ™ƒ๐Ÿ™‚๐Ÿ™ƒ
So today I slept until 10, waking up and craving for a sweet breakfast. ๐Ÿ’—๐Ÿ’—๐Ÿ’—Actually my breakfasts are sweet 350/365 days a year, ๐Ÿ’๐Ÿผ๐Ÿ˜‚but today I wanted something extraordinary since I had enough time because there is no school today.
So I came up with this recipe which is healthy, Full of protein and super fluffy!๐Ÿ˜‹๐Ÿ˜Œ๐Ÿ˜

And wouldn’t it be a great idea to surprise your valentine (your boyfriend, your mum, or whoever…) this Sunday?๐Ÿ’ž


In case you are as lucky as I was you can put a heart shaped rasspberry on top of it, or even bake heart shaped pancakes for Valentine’s day!


Ingredients: (~15 pancakes)
80g flour of your choice (I used rye)
200g low-fat quark / Greek yoghurt
200g buttermilk
2 eggs

Optional: sweetener of your choice

Note: I forgot about the sweetener, but since I used a sweet topping it was not necessary.๐Ÿ˜Œ

But you can use whatever you want which is one of the big advantages of my beloved pancakes.


Mix together the flour, the quark, the eggs and the buttermilk. The “dough” is not as liquid as the one of normal pancakes, but it should not be like cookie dough. It is supposed to have a similar consistency like muffin dough.

Use some oil to grease your pan and start baking the little paddies. They are not meant to be thin as crepรชs, because the result should be super fluffy and thick.๐Ÿณ

Now you can build a tower and use the topping of your choice for every layer. On top of it (or even in between) you can place fruits if you want.IMG_9113

Note: You can restore them in a box in your fridge for up to two days. If you heat them in your microwave don’t put them inside for more than 30 seconds. Otherwise they won’t be fluffy but hard instead.๐Ÿ˜‰

Here comes it’s great and simple recipe!

1 egg white
150g berries of your choice
3-4 tsp. sweetener (I used stevia)


Whisp the eggwhite and the sweetener until it is stiff. Add the berries and whisp it again.
Now you can…

… either enjoy it immediately.๐Ÿ™†๐Ÿผ






… freeze it to get berry ice cream.๐Ÿง


… use it as a topping for my Fluffy Protein Pancakes.๐Ÿณ



If you use frozen berries they need to be unfrozen. In case you heat them up to become unfrozen more quickly, you should wait until they are at room temperature again. If you want a liquid topping for pancakes, you can whisp in the hot berries.

Aloha from Hawaii

To me it feels like a dream. Less than one year ago I was on Big Island the biggest of the five islands which are known as the state of Hawaii. The memories are sweet but seem so unreal as it was only a dream. But it is not, because I have a proof:




The long beaches, the plants, the sun, the ocean, the volcanoes, the Dolphins, the whales,… It is so hard to stop the slideshow in my head when I have started for once…๐Ÿ’ญ

Hawaii is just incredible!image๐Ÿ˜๐Ÿ˜๐Ÿ˜Last year I spent ten days including Easter army aunts and uncle’s house. We had such an amazing time together…One thing which has deeply impressed me was the black beach. The sand is ash from the volcanoes and depending on the water appearing in different nuances. Next to the beach was the most beautiful forest I have ever been too. I felt as if I would dive into a fictions world (like lord of the rings – which is a movie I actually have never seen). The trees seemed so magical!

Another day we went to the Akaka Falls.๐Ÿ’ฆ Besides the beautiful park the eighty meter high waterfall took my breathe. ๐Ÿ˜I saw and did so many things that I could not decide for a ranking. I usually like ranking things, but among these gorgeous activities and adventures it is impossible. ๐Ÿ™…๐Ÿผ

Next to this it seems average but playing tennis and getting lessons in the Mauna Kea Resort which offers courts by the oseaside was another highlight of one of my greatest journeys. For me tennis is not only a sport – it is a passion๐ŸŽพโค๏ธ. I got such a beautiful skirt of the Serena Williams collection from my aunt which is a reminder of these awesome days when I have lessons in Germany.๐Ÿ˜Š But even without it I could never forget this time. It simply proves that all of this was real and not only a dream.


I almost got hit by a golf ball which was falling down from the sky. It sounds funnier than it was…


On Easter we went for a brunch at the Four Seasons. We had a nice table by the beach. My aunt is the best chef I know, even better than my grandma (sorry for this, but you are the second bestโค๏ธ) so it was challenging for the uncountable chefs there to offer us food which has a chance of compete ting against hers. But I think they did quite a good job…


Okay, enough food porn. You want to get to know more about Hawaii, right?

A great way of discovering the island is going on a helicopter ride. Unfortunately the day we went the volcanoes where active so we could not fly above them. Anyway the experience was unique and the pictures in my head are breath taking. Every time I think back I have the song Good Life on my mind because it had been played on the flight when we were above the high valleys covered all in green which reminds me of the volvic water.

One day we went on a traditional market where we bought flowers ๐ŸŒบ๐ŸŒบ๐ŸŒบand food. It was a weekly market but it seemed to me as if it was arranged for tourists or something which is stupid because it was just a normal Hawaiian market in little white tents.

Two days we took my uncle’s boat ๐Ÿšคto see whales. He and his friend who is like family own a real equipment to locate them. We were lucky and saw one after about one hour of searching for them. Then we glanced another smaller one which was a baby whale (who still was way bigger than our boat). The whales were bigger than busses ๐Ÿ‹but that moment I was not scared at all. They must be surrounded by a peaceful aura or something. They made me calm down and I quickly forgot about my sea sickness. That day we saw many whales and some dived under or boat and played with us so that I could have touched them.๐Ÿณ


On our way back to the port I sat on the rim of the boat with one foot in the water. My aunt hold me so that I could pretend as if I was Rose from Titanic. It was like flying. I felt so free like I never did before.
The other day we went out by boat we only saw two whales from apart but lots of dolphins instead which was not bad either๐Ÿฌ.

While working out together with my sister on the cross trainer and the rowing machine I looked at the ocean trough the window and some fountains coming out of the water. My uncle called us and we saw whales jumping out of the water.
On the day we left it was similar as if they wanted to say good bye.

Flying back was sad, but since we flew to California I did not need to cry (which I did hardly on our flight back to Germany).


I learned that Aloha is not a word. It is a spirit.
This spirit cannot be described with words and has to be experienced. I am so glad that I had the chance to and I am sure that I will come back one day!


Even the water is different: this photo is taken trough the water! How crazy is this? I have never seen such clear water…

Everything is so different from here: the people, the animals,the flowers, fruits and plants, the weather, the airport (there are no walls at all, except for the sanitary rooms), …


For example Hawaii does not has seasons, so they do not have a summer or winter time. When it is summer time in Germany the time shift is twelve hours. I called my grandparents after I got up when it was already seven in the evening in Germany. Their day was almost over and mine had just started.

Oh, how much I miss the time… But as mentioned above do mI will definitely go to Hawaii again๐ŸŒบ๐ŸŒด๐ŸŒธ๐ŸŒž
